Simply Nutty Oat & Banana Pancakes

Another simply nutty recipe… Peanut Butter, Oat & Banana Pancakes!

What you need

1 cup (90g) rolled oats

2 tsp baking powder

2 tbsp Simply Nuts peanut butter No Added Salt plus extra 1 tablespoon to drizzle to serve

3 eggs

2 tsp vanilla extract

6 fresh dates (90g), pitted

1 tbsp white chia seeds

2 bananas

¼ cup milk, of your choice

1 tbsp extra virgin olive oil

Toppings to serve (sliced strawberries, caramelised banana, toasted walnuts, Greek yogurt, or your favourite toppings!)

Instructions

Step 1.

Place the oats, baking powder, peanut butter, eggs, vanilla, dates, chia, bananas and milk in a food processor and process until smooth.

Step 2.

Heat a large non-stick frying pan over low heat and brush with a little of the oil. In batches ¼ cup at a time, cook pancake mixture for 2 minutes on each side or until golden and cooked through, adding the remaining oil as needed. Set aside and keep warm.

Step 3.

Divide the pancakes between plates and serve with your favourite toppings. This might be sliced strawberries or caramelised banana, toasted walnuts, a dollop of Greek yogurt, a drizzle of honey or Simply Nuts peanut butter.
